Ingredients
- 4 cups mixed greens (baby spinach, arugula, romaine)
- 1 cup cherry tomatoes (halved)
- 1 medium cucumber (sliced thin)
- 1/4 medium red onion (thinly sliced)
- 1 ripe avocado (cubed)
- 1/2 cup feta cheese (crumbled) or vegan alternative
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
Instructions
- Wash and dry the mixed greens using a salad spinner or paper towels.
- Slice cherry tomatoes in half and cucumber into thin rounds. Thinly slice red onion.
- Cut open the avocado, remove the pit, scoop out the flesh, and cube it.
- In a large bowl, combine all prepared ingredients: mixed greens, tomatoes, cucumber, red onion, avocado, and feta cheese.
- In a small bowl or jar, whisk together lemon juice and olive oil; drizzle over salad before serving.
- Gently toss the salad to combine and serve immediately.
