  • 1/4 cup all-purpose or almond flour
  • 3/4 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 1/4 cup red bell pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • Chopped parsley or sliced green onion (for garnish)

Instructions

  1. Rice the cauliflower using a food processor or cheese grater until it resembles small grains.
  2. Microwave the riced cauliflower in a large bowl for 2 minutes and let cool.
  3. Squeeze out excess moisture using paper towels.
  4. In the same bowl, combine the riced cauliflower with egg, flour, cheeses, onion, and seasonings; mix well.
  5. Shape into 8 equal patties about 1/2 inch thick.
  6. Preheat air fryer to 400°F for 5 minutes.
  7. Spray the basket with cooking spray and place patties inside; spray tops lightly.
  8. Cook for 12-15 minutes, flipping halfway through until golden brown.
