- 3 cups riced cauliflower (fresh or thawed frozen)
- 1 egg
- 1/4 cup all-purpose or almond flour
- 3/4 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup chopped onion
- 1/4 cup red bell pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- Chopped parsley or sliced green onion (for garnish)
Instructions
- Rice the cauliflower using a food processor or cheese grater until it resembles small grains.
- Microwave the riced cauliflower in a large bowl for 2 minutes and let cool.
- Squeeze out excess moisture using paper towels.
- In the same bowl, combine the riced cauliflower with egg, flour, cheeses, onion, and seasonings; mix well.
- Shape into 8 equal patties about 1/2 inch thick.
- Preheat air fryer to 400°F for 5 minutes.
- Spray the basket with cooking spray and place patties inside; spray tops lightly.
- Cook for 12-15 minutes, flipping halfway through until golden brown.
