Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it.
- In a large bowl, whisk together all dry ingredients: flour, baking soda, baking powder, spices, and salt.
- In another bowl, mix wet ingredients: pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
- Combine the wet mixture with the dry ingredients using a spatula; stir until just combined.
- For the streusel topping, mix flour, sugars, and cinnamon in a small bowl; add butter and blend until crumbly.
- Fill muffin cups with batter and sprinkle streusel on top.
- Bake for 18–22 minutes or until a skewer comes out clean.
- Let cool before transferring to a wire rack.
