Ingredients
- 2 cups finely diced apple
- 2 cups flour (spelt, white, or oat)
- 3/4 cup sugar
- 1 cup milk (of choice)
- 3 1/2 tbsp oil (or applesauce)
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 2 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking powder, salt, baking soda, and cinnamon; mix well.
- In another bowl, blend the diced apples, sugar, milk, oil (or applesauce), and vanilla extract until combined.
- Pour the wet mixture into the dry ingredients and stir gently until just mixed.
- Pour the batter into a greased 9×5 inch loaf pan and bake for about 50 minutes or until a toothpick comes out mostly clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
