Ingredients
- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–¾ cups all-purpose flour
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- 1/4 teaspoon coarse kosher salt
- 1 tablespoon butter, at cool room temperature
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F. Prepare a 9” square baking dish by greasing it and lining with parchment paper.
- In a sauté pan, boil the apple cider until reduced by half, about 5 minutes.
- Whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt in a medium bowl.
- Mix in the reduced cider until combined.
- Gently fold in the flour until just incorporated.
- Pour the batter into the prepared dish and bake for 22–25 minutes or until golden brown.
- Cool slightly before topping with butter and cinnamon sugar.
