  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Prepare a 9” square baking dish by greasing it and lining with parchment paper.
  2. In a sauté pan, boil the apple cider until reduced by half, about 5 minutes.
  3. Whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt in a medium bowl.
  4. Mix in the reduced cider until combined.
  5. Gently fold in the flour until just incorporated.
  6. Pour the batter into the prepared dish and bake for 22–25 minutes or until golden brown.
  7. Cool slightly before topping with butter and cinnamon sugar.
