Instructions
- Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
- In one bowl, mix together flour, light brown sugar, granulated sugar, and cinnamon for the crumble; then combine with melted butter until clumps form.
- In another bowl, whisk together flour, baking powder, salt, and spices for the muffin batter.
- In a large bowl, cream butter and sugars until fluffy; add eggs, sour cream, and vanilla extract until combined.
- Gradually mix in dry ingredients alternating with milk; fold in diced apples.
- Divide batter into muffin cups and sprinkle crumble topping over each one.
- Bake for 20 minutes or until a toothpick comes out clean.
