- 1/2 cup softened butter
- 1/2 cup packed brown sugar
- 1/4 teaspoon baking soda
- 1 1/4 cups rolled oats
- 3/4 cup all-purpose flour
- 1 cup apricot preserves
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8×8 or 9×9 baking dish with non-stick cooking spray.
- In a mixing bowl, combine softened butter, brown sugar, baking soda, rolled oats, and flour. Mix well using a fork or pastry cutter.
- Set aside 2 cups of the mixture and press the remaining crumb mixture firmly into the bottom of the prepared baking dish to create the base.
- Spread apricot preserves evenly over the crust, leaving about a 1/4-inch border.
- Sprinkle the reserved oat mixture over the top of the preserves.
- Bake for 30-35 minutes or until golden brown on top.
- Allow to cool completely before cutting into bars.
