Ingredients
- 1 lb linguini noodles
- 2 ripe avocados
- 2 egg yolks
- 2 large leaves of kale
- 3–4 cloves of garlic
- ¼ cup extra virgin olive oil
- 1½ tablespoons lemon juice
- Salt
- Paprika
- Cayenne pepper
- Cooked turkey bacon (for topping)
- Shredded Parmesan cheese (for serving)
Instructions
- Boil a large pot of salted water and cook the linguini until al dente (about 8-10 minutes). Reserve 1 cup of pasta water before draining.
- In a blender or food processor, combine avocados, egg yolks, kale, garlic, olive oil, lemon juice, salt, paprika, and cayenne. Blend until smooth.
- Gradually add reserved pasta water to the blender until desired creaminess is achieved.
- Toss the avocado sauce with cooked linguini in a large bowl. Mix in crumbled turkey bacon and shredded Parmesan cheese.
- Serve immediately for best flavor.
