- 1 1/2 lbs zucchini
- 1/2 cup freshly grated Parmesan cheese

- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Kosher salt and black pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper or foil.
- In a mixing bowl, combine the grated Parmesan cheese with dried herbs, smoked paprika, garlic powder, salt, and pepper.
- Toss the zucchini wedges in olive oil until evenly coated. Roll each wedge in the Parmesan mixture until fully covered.
- Arrange the coated zucchini on the prepared baking sheet and bake for about 15 minutes. For extra crispiness, broil for an additional 2-3 minutes while keeping an eye to prevent burning.
- Garnish with chopped parsley before serving warm.
