Ingredients
- 2 lbs boneless chicken thighs or breasts
- 1 cup plain Greek yogurt
- 2 tbsp olive oil
- 3 tbsp lemon juice + zest from lemon
- 2 cloves garlic (crushed)
- 2 tbsp za’atar seasoning
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F.
- In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice, lemon zest, garlic, za’atar seasoning, salt, black pepper, and red pepper flakes until smooth.
- Place chicken in a large plastic storage bag or container and pour marinade over it. Ensure all pieces are well-coated. Seal and refrigerate for at least 30 minutes or overnight.
- Lightly grease a baking dish with cooking spray or olive oil. Remove excess marinade from chicken before placing it in the dish in a single layer.
- Bake uncovered for about 45 minutes or until the chicken reaches an internal temperature of 165°F and is golden brown.
- Let it rest for a few minutes before garnishing with fresh parsley and serving.
