  • 2 medium zucchinis
  • ½ cup sugar
  • ¼ cup olive oil
  • ¼ cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt
  • Optional: ⅓ cup dark chocolate chips
  • Optional: ½ cup walnuts

Instructions

  1. Preheat your oven to 350°F (180°C). Line a loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Mix in sugar, olive oil, almond milk, and vanilla extract.
  3. Grate the zucchinis and squeeze out excess moisture. Fold them into the banana mixture.
  4. Combine flour, baking powder, baking soda, and salt in a separate bowl. Gradually mix into the wet ingredients until just combined.
  5. If desired, fold in dark chocolate chips or walnuts.
  6. Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes until golden brown and a toothpick comes out mostly clean.
