- 3 ripe bananas
- 2 medium zucchinis
- ½ cup sugar
- ¼ cup olive oil
- ¼ cup almond milk
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ⅛ teaspoon salt
- Optional: ⅓ cup dark chocolate chips
- Optional: ½ cup walnuts
Instructions
- Preheat your oven to 350°F (180°C). Line a loaf pan with parchment paper.
- In a large bowl, mash the bananas until smooth. Mix in sugar, olive oil, almond milk, and vanilla extract.
- Grate the zucchinis and squeeze out excess moisture. Fold them into the banana mixture.
- Combine flour, baking powder, baking soda, and salt in a separate bowl. Gradually mix into the wet ingredients until just combined.
- If desired, fold in dark chocolate chips or walnuts.
- Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes until golden brown and a toothpick comes out mostly clean.
- Allow to cool completely on a wire rack before slicing.
