  • 1 tsp ground coriander
  • Salt and black pepper to taste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth

Instructions

  1. Heat a Dutch oven over medium heat. Sauté onion until translucent (about 5 minutes). Add garlic and ginger; cook for another 2 minutes.
  2. Increase heat slightly and add beef chunks in batches, browning all sides (6-8 minutes).
  3. Add spices (curry powder, cumin, turmeric, cayenne pepper, smoked paprika, coriander, salt, and black pepper) to the pot. Stir well.
  4. Pour in coconut milk and tomato paste; stir until combined. Gradually add beef broth while stirring.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 2-3 hours until the beef is tender.
