Ingredients
- 1 green bell pepper (cut into 1" pieces)
- ¾ English cucumber (peeled, seeded, and quartered into 1" slices)
- 5 roma tomatoes (cut into 1" pieces)
- ¼ cup red onion (thinly sliced)
- ½ cup kalamata olives (whole and pitted)
- 8 ounces feta cheese (cut into ½" chunks)
- ⅓ cup olive oil
- 3½ tablespoons red apple vinegar
- 2 cloves garlic (minced)
- 1½ teaspoons dried oregano (or 1½ tablespoons fresh)
- 1 teaspoon dried dill (or 1 tablespoon fresh)
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Wash and chop all vegetables: green bell pepper into 1-inch pieces, cucumber into quartered slices, tomatoes into 1-inch pieces, and slice red onion thinly.
- In a mixing bowl, combine the chopped vegetables, kalamata olives, and feta cheese. Toss gently.
- In a separate bowl, whisk together olive oil, red apple vinegar, minced garlic, oregano, dill, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat. Let sit for about 10 minutes before serving to allow flavors to meld.
