  • 8 ounces feta cheese (cut into ½" chunks)
  • ⅓ cup olive oil
  • 3½ tablespoons red apple vinegar
  • 2 cloves garlic (minced)
  • 1½ teaspoons dried oregano (or 1½ tablespoons fresh)
  • 1 teaspoon dried dill (or 1 tablespoon fresh)
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Wash and chop all vegetables: green bell pepper into 1-inch pieces, cucumber into quartered slices, tomatoes into 1-inch pieces, and slice red onion thinly.
  2. In a mixing bowl, combine the chopped vegetables, kalamata olives, and feta cheese. Toss gently.
  3. In a separate bowl, whisk together olive oil, red apple vinegar, minced garlic, oregano, dill, salt, and pepper until well combined.
