Ingredients
- 1 lb chicken or turkey sausage, sliced
- 1 lb cheese tortellini (fresh or frozen)
- 2 cups bell peppers, diced
- 1 cup red onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your Blackstone grill to medium-high heat for about 5 minutes.
- Boil salted water in a large pot; add tortellini and cook according to package instructions (3-5 minutes). Drain and set aside.
- In a mixing bowl, toss bell peppers, red onion, garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper until well-coated.
- Grill the sliced sausage on the preheated grill for 3-4 minutes until browned.
- Push the sausage to one side and add the seasoned vegetables; grill for another 5-7 minutes until tender.
- Add the drained tortellini to the grill; gently toss everything together and heat through for about 2-3 minutes.
- Taste and adjust seasoning as needed before garnishing with parsley.
