  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a springform pan with parchment paper.
  2. In a large bowl, mix flour, baking powder, sugars, and salt.
  3. Incorporate cold butter until crumbly, then add eggs and vanilla; mix until combined.
  4. Press two-thirds of the mixture into the prepared pan to form the crust.
  5. For the filling, blend mascarpone, cream cheese, sugar, cornstarch, and eggs until smooth.
  6. Layer half the cheesecake mixture over the crust, sprinkle blueberries on top, then add remaining cheesecake mixture.
  7. Bake for 65–75 minutes until golden; cool gradually before serving.
