- 4–5 ripe peaches, cored and cut into wedges
- 1 stick butter (8 tablespoons)
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 3 eggs
- 1 cup all-purpose flour
- 1/4 cup almond flour
- 2 tbsp fruit juice or broth (as a bourbon substitute)
- 1/2 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and line a 9-inch cake pan with parchment paper.
- Arrange peach wedges in the pan and sprinkle with cinnamon.
- In a saucepan, heat water and sugar until light brown; add the fruit juice or broth for caramel.
- Beat butter and sugar until fluffy, then mix in eggs one at a time, followed by vanilla and juice/broth.
- Combine dry ingredients separately, then mix into wet ingredients until just combined.
- Pour batter over peaches and smooth out.
- Bake for about 30-35 minutes or until a toothpick comes out clean.
- Cool for 15-30 minutes before inverting onto a serving plate.
