Ingredients
- 1 cup cold unsalted butter
- 2 ⅔ cups + 1 tbsp all-purpose flour
- 3/4 teaspoon fine sea salt
- 1/2 cup water
- 1 tbsp apple cider vinegar
- 3 cups fresh sliced peaches
- 3 cups fresh strawberries (hulled and quartered)
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
- Prepare the brown butter crust by melting cold unsalted butter in a saucepan over medium heat until golden brown. Allow it to cool slightly.
- In a mixing bowl, combine flour and salt; add browned butter, apple cider vinegar, and water. Mix until combined and form into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- For the filling, mix together sliced peaches, hulled strawberries, sugar, cornstarch, lemon juice, and salt in another bowl until fruits are evenly coated.
- Preheat oven to 375°F (190°C). Roll out half of the chilled dough to fit your pie dish and fill it with the fruit mixture. Roll out the second half for the top crust, crimp edges to seal, and brush with whisked egg.
- Bake for about 70 minutes or until golden brown. Let cool before slicing.
