- 1 cup cold unsalted butter
- 2 ⅔ cups + 1 tbsp all-purpose flour
- 3/4 teaspoon fine sea salt
- 1/2 cup cold water
- 1 tablespoon apple cider vinegar
- 3 cups fresh sliced peaches
- 3 cups fresh strawberries (hulled and quartered)
- ¼ cup granulated sugar
- ¼ cup + 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Instructions
- Prepare the brown butter by melting cold unsalted butter in a saucepan over medium heat until golden brown and nutty. Allow it to cool slightly.
- In a mixing bowl, combine all-purpose flour and sea salt with cooled brown butter until crumbly. Gradually mix in water and vinegar until dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- For the filling, mix sliced peaches, strawberries, granulated sugar, cornstarch, lemon juice, lemon zest, and sea salt in another bowl until well coated.
- Preheat oven to 375°F (190°C). Roll out the chilled dough into a circle to fit your pie dish. Fill with fruit mixture and top with remaining dough, sealing the edges by crimping.
- Bake for about 70 minutes or until golden brown and bubbly. Cool before serving.
