- 3/4 cup mashed ripe banana (about 2 small bananas)
- 2 tablespoons melted unsalted butter
- 1 large egg
- 3/4 cup buttermilk
- 1/4 cup packed brown sugar
- 1 teaspoon pure vanilla extract
Instructions
- In a large bowl, mix together flour, baking powder, and salt.
- In another bowl, whisk mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla until combined.
- Gently fold the wet ingredients into the dry ingredients until just mixed—lumps are okay.
- Heat a greased griddle over medium-low heat. Pour about 1/3 cup of batter onto the griddle for each pancake.
- Cook until bubbles form on top (about 2-3 minutes), then flip and cook until golden brown on both sides.
