Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 oz rotini pasta
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Cajun seasoning, adjust to taste
- Salt and black pepper, to taste
- Fresh chopped parsley, for garnish
Instructions
- Boil a large pot of salted water and cook rotini until al dente (9-10 minutes). Reserve ½ cup of pasta water, then drain.
- Season chicken with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken until golden (7-8 minutes), adding half of the minced garlic in the last minute.
- Remove chicken and lower heat. Add remaining butter and garlic; sauté for 30 seconds.
- Stir in heavy cream; simmer for 2-3 minutes until slightly thickened.
- Mix in mozzarella and Parmesan until melted.
- Season sauce with Italian seasoning and red pepper flakes (if desired). Combine with cooked rotini, adding reserved pasta water as needed.
- Serve hot, garnished with parsley and extra cheese.
