  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning, adjust to taste
  • Salt and black pepper, to taste
  • Fresh chopped parsley, for garnish

Instructions

  1. Boil a large pot of salted water and cook rotini until al dente (9-10 minutes). Reserve ½ cup of pasta water, then drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken until golden (7-8 minutes), adding half of the minced garlic in the last minute.
  4. Remove chicken and lower heat. Add remaining butter and garlic; sauté for 30 seconds.
  5. Stir in heavy cream; simmer for 2-3 minutes until slightly thickened.
  6. Mix in mozzarella and Parmesan until melted.
  7. Season sauce with Italian seasoning and red pepper flakes (if desired). Combine with cooked rotini, adding reserved pasta water as needed.
  8. Serve hot, garnished with parsley and extra cheese.
