Ingredients
- 2 chicken breasts (skinless, boneless)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 bell pepper (red or green), diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained

- 1 tablespoon tomato paste
- 1/4 cup chicken broth
- 4 hamburger buns
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped chicken, seasoning with salt and pepper. Cook for 5–7 minutes until fully cooked and lightly browned. Shred if desired.
- Stir in the diced onion, bell pepper, and garlic; sauté for another 3–4 minutes until softened.
- Mix in Cajun seasoning, tomato paste, and chicken broth; let simmer for about 10 minutes until the flavors meld and sauce thickens.
- Toast the hamburger buns. Spoon generous amounts of the Cajun chicken mixture onto each bun and serve hot.
