- 12 eggs
- 1 stalk of celery
- 1 green onion
- 4 tablespoons mayonnaise
- 2 tablespoons Creole mustard
- ¼ teaspoon Cajun seasoning
- 1 teaspoon hot sauce
Instructions
- Boil the eggs: Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat; let sit for 11 minutes. Transfer to an ice bath to cool.
- Prepare the filling: Peel cooled eggs, slice in half lengthwise, and scoop yolks into a bowl. Finely chop celery and green onion; add to yolks.
- Mix until smooth: Add mayonnaise, Creole mustard, Cajun seasoning, and hot sauce. Blend until creamy.
- Fill egg whites: Spoon or pipe mixture back into egg white halves and garnish if desired.
