Ingredients
- 3–4 large carrots
- 1 Tbsp ghee or butter
- 1/2 tsp fresh rosemary, minced (or ¼ tsp dried)
- 1/2 tsp fresh parsley, minced (or ¼ tsp dried)
- 1/4 tsp salt
Instructions
- Clean the carrots thoroughly under running water.
- Use a vegetable peeler to create long ribbons from each carrot, rotating as necessary until fully peeled.
- Bring about an inch of water to boil in a saucepan and place the carrot ribbons in a steamer basket above the boiling water. Cover with a lid and steam for approximately 3 minutes until crisp-tender.
- In a small bowl, combine ghee or butter with minced rosemary, parsley, and salt.
- Toss the steamed carrot ribbons gently with the rosemary butter sauce until evenly coated. Serve immediately for optimal flavor.
