Ingredients
- 3/4 cup raw cashews
- 1 1/2 cups broth (chicken or vegetable)
- 12 ounces gluten-free pasta
- 1 pound boneless skinless chicken breasts
- 3 tablespoons olive oil
- 1/2 small yellow onion
- 1/2 large red pepper
- 1/2 a large yellow or orange pepper
- 3 cloves of garlic
- 2 tablespoons tomato paste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/4 teaspoon dried thyme
- Pinch or two of cayenne (optional)
- Parsley, to garnish (optional)
Instructions
- Soak cashews in hot water for at least 30 minutes.
- Cook gluten-free pasta according to package instructions; reserve some cooking water.
- In a small bowl, combine spices for seasoning.
- Cook chicken in olive oil until browned; remove from skillet.
- Sauté onion, bell peppers, and garlic in the same skillet.
- Stir in tomato paste and spices.
- Blend soaked cashews with broth and nutritional yeast until smooth.
- Add cooked pasta, chicken, and cashew sauce to the skillet; stir to combine.
- Adjust consistency with reserved pasta water if needed; season to taste before serving.
