- 1 lb frozen beef or turkey meatballs
- 4 cups fresh baby spinach
- 4 medium russet potatoes, thinly sliced
- 2 cups shredded cheddar cheese
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a large baking dish.
- In a skillet over medium heat, sauté the chopped onion in olive oil until translucent. Add minced garlic and cook for an additional minute.
- Layer half of the sliced potatoes in the baking dish. Top with half of the onion-garlic mixture, half of the spinach, and half of the meatballs.
- Sprinkle a generous layer of cheddar cheese on top. Repeat the layers with the remaining ingredients.
- Pour chicken broth evenly over the top. Bake for 45-50 minutes until golden brown and bubbly.
