Ingredients
- 1 ¾ cups heavy cream
- 1 cup mascarpone cheese (room temperature)
- ⅓ cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups strong brewed coffee (cooled)
- 1 ½ cups cherry preserves
- ½ cup fresh cherries, pitted and halved (plus more for topping)
- 1 package (about 7 oz) ladyfinger cookies (savoiardi)
- Unsweetened cocoa powder (for dusting)
- Shaved chocolate or sliced almonds (optional)
Instructions
- In a large bowl, whip the heavy cream until soft peaks form. Add the mascarpone cheese, powdered sugar, and vanilla extract; whip until smooth and fluffy.
- In a shallow dish, combine the cooled coffee.
- Quickly dip each ladyfinger into the coffee mixture without soaking them, then line the bottom of a 9×9-inch dish with the dipped cookies.
- Spread half of the mascarpone mixture over the ladyfingers.
- Spoon half of the cherry preserves and halved fresh cherries over the cream layer.
- Repeat the layers with remaining ladyfingers, mascarpone mixture, and cherries.
- Cover and refrigerate for at least 6 hours or overnight for best flavor.
- Dust with cocoa powder before serving and garnish as desired.
