- 340 g all-purpose flour
- 1 teaspoon salt
- 230 g unsalted butter (cold & cubed)
- 140 g ice cold water
- 4 tart apples (about 700g after peeled, cored, and sliced)
- 300 g red cherries (pitted & halved)
- 50 g brown sugar
- 20 g cornstarch
- 1 tablespoon ground cinnamon
- 2 teaspoons vanilla extract
- 1 egg (beaten) for brushing
- 2 tablespoons sugar crystals or coarse sugar
Instructions
- Prepare the Crust: Mix flour and salt in a bowl. Blend in cold butter until crumbly. Gradually add ice water to form dough. Divide into discs, wrap in plastic, and refrigerate for at least one hour.
- Make the Filling: In another bowl, toss sliced apples and cherries with brown sugar, cornstarch, cinnamon, and vanilla until coated.
- Roll Out Dough: On a floured surface, roll out one disc into a circle to fit your pie dish. Place it in the dish.
- Assemble: Pour filling into the crust and cover with the second rolled-out disc or create a lattice top. Seal edges.
- Bake: Preheat oven to 180°C (350°F). Brush with beaten egg and sprinkle with sugar crystals. Bake for about 70 minutes until golden brown.
- Cool & Serve: Allow cooling before slicing; serve plain or with toppings like whipped cream or ice cream.
