  • 140 g ice cold water
  • 4 tart apples (about 700g after peeled, cored, and sliced)
  • 300 g red cherries (pitted & halved)
  • 50 g brown sugar
  • 20 g cornstarch
  • 1 tablespoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 egg (beaten) for brushing
  • 2 tablespoons sugar crystals or coarse sugar

Instructions

  1. Prepare the Crust: Mix flour and salt in a bowl. Blend in cold butter until crumbly. Gradually add ice water to form dough. Divide into discs, wrap in plastic, and refrigerate for at least one hour.
  2. Make the Filling: In another bowl, toss sliced apples and cherries with brown sugar, cornstarch, cinnamon, and vanilla until coated.
  3. Roll Out Dough: On a floured surface, roll out one disc into a circle to fit your pie dish. Place it in the dish.
  4. Assemble: Pour filling into the crust and cover with the second rolled-out disc or create a lattice top. Seal edges.
  5. Bake: Preheat oven to 180°C (350°F). Brush with beaten egg and sprinkle with sugar crystals. Bake for about 70 minutes until golden brown.
