- 0.5 cup chopped cilantro
- 0.5 cup chopped peanuts (optional)

Instructions
- Marinate the chicken: In a bowl, whisk together olive oil, sweet chili sauce, soy sauce, honey, ginger, garlic, and black pepper. Add chicken cubes and let marinate for at least 15 minutes.
- Cook the chicken: Heat a skillet over medium-high heat and cook the marinated chicken until browned and cooked through (about 8–10 minutes).
- Prepare the drizzle: In a separate bowl, whisk together coconut milk, lime juice, honey, and salt until smooth.
- Assemble bowls: Divide cooked quinoa or rice among bowls and top with shredded vegetables. Add cooked chicken on top.
- Finish with drizzle: Generously drizzle each bowl with the coconut lime sauce and serve immediately with lime wedges.
