Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tsp dried thyme or Italian seasoning
- Fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Heat olive oil in a large skillet over medium heat; season chicken with salt, pepper, and thyme. Cook for 5-6 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté garlic for 1 minute; add mushrooms and cook until softened (about 5 minutes). Stir in spinach and cook until wilted (2-3 minutes).
- Add heavy cream and chicken broth to the skillet; simmer for 3-4 minutes until slightly thickened.
- Place chicken in the baking dish; pour sauce over it and top with mozzarella and Parmesan cheese.
- Bake for 15-20 minutes until cheese is melted and bubbly.
