Ingredients
- 2 – 2.5 lbs (900g-1.1kg) deboned skin-on chicken thighs
- 1/2 cup fresh lime juice
- 1 teaspoon fresh lime zest
- 1/4 cup olive oil
- 3 tablespoons fresh cilantro leaves (roughly chopped)
- 1 jalapeño (chopped finely)
- 2 teaspoons chipotle chili powder
- 5 cloves garlic (minced)
- 1 1/2 tablespoons honey
- 2 teaspoons salt
Instructions
- Prepare the chicken by deboning the thighs and rinsing them under cold water; pat dry.
- In a large bowl, whisk together lime juice, lime zest, olive oil, cilantro, jalapeño, chipotle chili powder, garlic, honey, and salt until well combined. Reserve some marinade for basting.
- Add chicken to the marinade, ensuring it is coated evenly. Marinate in the refrigerator for at least 2 hours.
- Preheat your grill and brush reserved marinade on top of marinated chicken.
- Grill until golden brown and charred on both sides.
- Serve immediately with fresh lime wedges.
