Instructions
- Cream together the softened butter and granulated sugar in a bowl until light and fluffy.
- Mix in the egg and vanilla extract until fully combined.
- In another bowl, whisk together flour, baking powder, and salt before gradually adding to the wet mixture.
- Roll out the dough between two sheets of parchment paper into a rectangle about ¼-inch thick.
- Prepare the filling by mixing melted butter, brown sugar, and cinnamon; spread evenly over the rolled dough.
- Roll the dough into a log shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Slice chilled dough into rounds about ¼-inch thick.
- Bake for 10-12 minutes or until edges are lightly golden; allow to cool completely before glazing.
- Mix glaze ingredients until smooth; drizzle over cooled cookies.
