Ingredients
- 2 pounds fresh clams, cleaned
- 1 can (14 oz) coconut milk
- 2 stalks lemongrass, smashed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon lime juice
- Salt and black pepper to taste
- Fresh cilantro for garnish
Instructions
- Clean the clams by soaking them in water for about 20 minutes.
- In a large pot, heat coconut milk over medium heat until gently simmering.
- Add lemongrass, garlic, and ginger; stir and infuse for 2-3 minutes.
- Season with lime juice, salt, pepper, and optional chili peppers.
- Introduce cleaned clams to the pot; cover and steam for 5-7 minutes until they open.
- Discard any unopened clams.
- Serve in bowls with broth and garnish with fresh cilantro.
