- 8 oz fresh shiitake or cremini mushrooms, sliced
- 4 cups low-sodium vegetable broth
- 6 oz ramen noodles (fresh or instant)
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 2 green onions, sliced (for topping)
- 1 tsp agar-agar (for thickening, optional)
Instructions
- Sauté ginger and garlic in a large pot with a splash of vegetable oil over medium heat until fragrant (about 1 minute).
- Add sliced mushrooms and stir-fry until tender (about 5 minutes).
- Pour in vegetable broth and bring to a gentle boil. Add ramen noodles and cook according to package instructions (3-4 minutes).
- For thicker broth, stir in agar-agar and simmer for an additional couple of minutes.
- Serve hot, topped with sliced green onions.
