- 1 medium yellow onion, diced
- 2 large carrots, diced
- 2 ribs celery, diced
- 2 teaspoons garlic, minced
- 1 packet dry ranch seasoning mix
- 6 cups chicken broth
- 1 cup long-grain white rice, uncooked
- 2 cups rotisserie chicken, shredded
- 4 ounces cream cheese, softened
Instructions
- In a large pot over medium heat, combine olive oil and butter.
- Sauté the onion, carrots, and celery until softened (8–10 minutes). Add garlic and cook for an additional minute.
- Stir in ranch seasoning, then add chicken broth and bring to a boil.
- Lower the heat and stir in rice; simmer for 20–25 minutes until rice is tender.
- Fold in shredded chicken and cream cheese until melted and well combined.
- Serve hot, garnished with fresh parsley.
