- 4 ounces softened cream cheese
- 1/4 cup granulated sugar (for filling)
- 3 tablespoons all-purpose flour (for filling)
Instructions
- Preheat the oven to 350°F and prepare a loaf pan.
- In a large bowl, whisk together egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla, cinnamon, pumpkin pie spice, and nutmeg.
- Gradually add flour, baking powder, baking soda, and salt; mix until just combined.
- Pour two-thirds of the batter into the loaf pan; smooth the top.
- In another bowl, whisk cream cheese with sugar and flour until smooth.
- Spread cream cheese mixture over the batter in the pan; top with remaining batter.
- Bake for about 48 minutes until golden brown; cool before slicing.
