Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tbsp vegetable or coconut oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red curry paste
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp chili flakes
- 1 can (14 oz) full-fat coconut milk
- 1 cup beef broth
- Juice of 1 lime
Instructions
- In a cast-iron skillet or Dutch oven, heat the oil over medium-high heat.
- Sear the beef cubes in batches until browned on all sides; set aside.
- In the same pan, sauté the onion until soft, then add garlic and ginger until fragrant.
- Return the beef to the pan and stir in the spices and broth; combine well.
- Cover and reduce heat to low, simmering for 2-3 hours until the beef is tender.
- Finish with lime juice before serving alongside garlic naan and fries.
