Instructions
- In a large bowl, mix the thawed corn, red bell pepper, purple onion, and jalapeño until evenly combined.
- In a separate bowl, whisk together the Greek yogurt, mayonnaise, salt, black pepper, and garlic powder until smooth.
- Gently stir the dressing into the corn mixture until well coated. Add the chopped cilantro and stir lightly.
- Refrigerate for at least 30 minutes before serving to enhance flavor.
