Ingredients
- 1 lb boneless, skinless chicken breasts
- 12 oz linguine pasta
- 1 cup heavy cream
- 1 cup Velveeta cheese
- 1 cup shredded mozzarella cheese
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper, to taste
- cup grated Parmesan cheese, for topping chicken
- cup grated Parmesan cheese, for sauce
- 3 cloves garlic, minced
- teaspoon red pepper flakes, optional
- 1 tablespoon chopped parsley, optional, for garnish
- cup reserved pasta water, if needed
Instructions
- Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear chicken until golden brown (4-5 minutes per side).
- Cook linguine in salted boiling water until al dente. Reserve some pasta water before draining.
- In the same skillet, melt remaining butter and sauté minced garlic until fragrant.
- Stir in heavy cream and Velveeta cheese until melted and smooth.
- Add shredded mozzarella and Parmesan; mix until well combined.
- Toss cooked linguine in the sauce until fully coated. Adjust thickness with reserved pasta water as needed.
- Serve immediately with garnished parsley if desired.
