  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • cup grated Parmesan cheese, for topping chicken
  • cup grated Parmesan cheese, for sauce
  • 3 cloves garlic, minced
  • teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, optional, for garnish
  • cup reserved pasta water, if needed

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear chicken until golden brown (4-5 minutes per side).
  3. Cook linguine in salted boiling water until al dente. Reserve some pasta water before draining.
  4. In the same skillet, melt remaining butter and sauté minced garlic until fragrant.
  5. Stir in heavy cream and Velveeta cheese until melted and smooth.
  6. Add shredded mozzarella and Parmesan; mix until well combined.
  7. Toss cooked linguine in the sauce until fully coated. Adjust thickness with reserved pasta water as needed.
  8. Serve immediately with garnished parsley if desired.
