Ingredients
- 2 large sweet potatoes
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme leaves
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C) and grease a muffin tin.
- In a mixing bowl, combine thinly sliced sweet potatoes with melted butter, olive oil, garlic powder, thyme, salt, and pepper. Toss until coated.
- Layer about 5–6 slices of sweet potato in each muffin cup and sprinkle with Parmesan cheese.
- Bake for 30–35 minutes until edges are crispy. In the last 5 minutes, add remaining Parmesan on top.
- Let cool briefly before removing from the muffin tin and garnish with extra thyme if desired.
