Ingredients
- 3 lbs boneless, skinless chicken thighs
- 1 cup light brown sugar
- 1 cup soy sauce
- 2 tablespoons apple cider vinegar
- 4 cloves garlic, minced
- 3 tablespoons cornstarch
- 2 tablespoons water
Instructions
- Place chicken thighs in the bottom of your slow cooker.
- In a mixing bowl, whisk together brown sugar, soy sauce, apple cider vinegar, minced garlic, and other spices. Pour over the chicken.
- Cover and cook on high for 4 hours or low for 6 hours until the chicken is tender.
- Shred the chicken after cooking and return it to the slow cooker.
- Mix cornstarch with water to create a slurry and stir into the sauce to thicken.
- Cook for an additional 5–10 minutes before serving over rice or cauliflower rice.
