- 2 medium Honeycrisp apples, cored and diced (about 300g)
- 1/4 cup red onion, thinly sliced (about 40g)
- 1/3 cup dried cranberries (about 50g)
- 1/4 cup sunflower seeds, toasted (about 35g)
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp maple syrup
Instructions
- 1. Rinse and chop broccoli into bite-sized florets. Core and dice the Honeycrisp apples.
- 2. In a large mixing bowl, combine broccoli, apples, red onion, dried cranberries, and sunflower seeds.
- 3. In a small bowl, whisk together olive oil, apple cider vinegar, and maple syrup until emulsified.
- 4. Drizzle dressing over the salad mixture and toss gently until evenly coated.
- 5. Cover and chill in the refrigerator for at least 30 minutes before serving for best flavor.
