- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil
- 2 tbsp blackening seasoning
- 8 soft flour or corn tortillas
- 1 ripe mango, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat grill or skillet over medium-high heat.
- Pat chicken breasts dry and rub with olive oil and blackening seasoning until fully coated.
- Grill or sear chicken for 5-7 minutes per side until charred and cooked through (internal temperature should reach at least 165°F).
- While chicken cooks, combine mango, avocado, red onion, cilantro, and lime juice in a bowl; mix gently.
- Slice cooked chicken into strips and fill tortillas with the chicken and generous spoonfuls of salsa.
- Serve immediately and enjoy!
