- 4 boneless, skinless chicken breasts (about 1 lb)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, thinly sliced
- 2 tbsp olive oil
- Juice of 2 limes
- 2 tsp chili powder
- 0.5 tsp cumin
- Salt and pepper to taste
Instructions
- Wash and slice the bell peppers and onion into thin strips. Chop cilantro and prepare your chosen toppings.
- In a bowl, mix chili powder, cumin, salt, and pepper. Coat chicken with olive oil and sprinkle the spice mixture over it.
- Heat a skillet over medium-high heat with a splash of olive oil. Cook seasoned chicken for about 6 minutes on each side until golden brown.
- Remove chicken from the skillet and add the sliced peppers and onion to the pan; sauté for about 5 minutes until tender but still crisp.
- Slice the cooked chicken and return it to the skillet with vegetables. Squeeze fresh lime juice over everything before serving.
- Spoon into bowls and top with cilantro, avocado slices, and sour cream.
