  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, thinly sliced
  • 2 tbsp olive oil
  • Juice of 2 limes
  • 2 tsp chili powder
  • 0.5 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Wash and slice the bell peppers and onion into thin strips. Chop cilantro and prepare your chosen toppings.
  2. In a bowl, mix chili powder, cumin, salt, and pepper. Coat chicken with olive oil and sprinkle the spice mixture over it.
  3. Heat a skillet over medium-high heat with a splash of olive oil. Cook seasoned chicken for about 6 minutes on each side until golden brown.
  4. Remove chicken from the skillet and add the sliced peppers and onion to the pan; sauté for about 5 minutes until tender but still crisp.
  5. Slice the cooked chicken and return it to the skillet with vegetables. Squeeze fresh lime juice over everything before serving.
