- 3–4 boneless, skinless chicken breasts (about 1.5 pounds)
- 3 cloves fresh garlic, minced
- 8 oz penne pasta
- 1 cup low-sodium chicken broth
- 8 oz cream cheese (full-fat)
- 2 tsp Italian seasoning
- 1 tsp agar-agar powder
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Chop the chicken into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add chicken and sauté until golden brown, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Boil water in a separate pot; cook penne according to package instructions until al dente. Reserve half a cup of pasta water.
- Reduce heat under the skillet; mix in cream cheese and chicken broth until smooth. Gradually add agar-agar powder to thicken the sauce.
- Combine cooked penne with the sauce in the skillet, tossing until well-coated. If too thick, add reserved pasta water as needed.
