- 2 tbsp lime juice
- 1 tsp sesame oil
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse under cold water.
- In a pan over medium heat, cook seasoned chicken breasts until golden brown (about 6-8 minutes per side). Let rest before slicing.
- Slice cucumbers and shred carrots into thin strips.
- In a bowl, mix peanut butter, soy sauce, lime juice, sesame oil, and water to thin if needed.
- Layer rice noodles in bowls, top with sliced chicken, veggies, and fresh herbs.
- Drizzle with peanut sauce and toss gently before serving.
