Ingredients
- 1 pound boneless skinless chicken breast
- 1 medium onion
- 1 zucchini
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp cumin
- 1 tsp sea salt
- ¼ tsp freshly milled pepper
Instructions
- Preheat the oven to 425°F (220°C).
- In a large mixing bowl, combine garlic powder, smoked paprika, dried oregano, cumin, sea salt, pepper, and olive oil to form the marinade.
- Add chicken, onion, and zucchini to the marinade; toss until well coated. Let marinate for at least 15 minutes.
- Transfer to a baking dish and spread evenly; bake uncovered for about 30 minutes or until cooked through.
