Ingredients
- 2¼–2½ cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- 1 pinch salt
- ½ cup very cold butter
- 1 egg
- 2½ cups sliced peaches (fresh or well-drained canned)
- 1½ tablespoons sugar (for peaches)
Instructions
- Preheat your oven to 350°F (180°C) and grease an 8-inch cake pan.
- In a medium bowl, mix sliced peaches with sugar and set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Add the egg and mix gently.
- Press about half of the crumb mixture into the bottom of the prepared pan. Spread the peach mixture evenly over it and sprinkle the remaining crumbs on top.
- Bake for 30-40 minutes until golden brown. Let cool before serving.
