- 1 pound ground turkey sausage (mild or spicy)
- 3 large carrots, peeled and chopped
- 2 ribs celery, finely chopped
- 1 medium onion, finely chopped
- 1 red bell pepper, finely chopped
- 4 cloves garlic, minced
- 7 cups low-sodium chicken broth
- 1½ cups dry ditalini pasta
- 1 cup fresh spinach, chopped
- Italian seasoning and salt to taste
Instructions
- In a large pot, brown the ground turkey sausage along with the carrots, celery, onion, and bell pepper over medium-high heat for about 5 minutes until tender.
- Add minced garlic, Italian seasoning, and salt; cook for another minute to enhance flavors.
- Pour in the chicken broth and scrape any bits from the bottom of the pot.
- Bring to a simmer; cover and cook for about 10 minutes until vegetables are tender.
- Stir in ditalini pasta; cover and cook for an additional 10 minutes until al dente.
- Incorporate fresh spinach before serving. Enjoy hot!
