Instructions
- Cube the watermelon into 1-inch pieces using a sharp knife.
- In a mixing bowl, combine the cubed watermelon, lime juice, salt, and chili seasoning. Toss gently to coat evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
- Before serving, sprinkle crumbled cotija cheese over the salad and add lime zest. Toss gently to mix.
