  • 1/4 cup maple syrup
  • 1 cup chicken stock

Instructions

  1. In a large bowl, mix the ground beef, breadcrumbs, grated onion, minced garlic, smoked paprika, dried sage, egg, vinegar substitute, salt, and pepper until just combined. Form into 16 meatballs.
  2. Heat olive oil in a skillet over medium-high heat. Brown the meatballs for about 6 minutes on all sides; set aside.
  3. Boil cubed sweet potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, cream, cinnamon, nutmeg, and salt until smooth.
  4. For the sauce, deglaze the skillet with fruit juice or vinegar, then stir in maple syrup and chicken stock. Simmer and return meatballs to cook through (8-10 minutes).
